The Opportunity We are currently seeking an experienced and trade-qualified Chef to join our high-profile aviation catering client based at Sydney Airport.
This is not a typical restaurant role. You will be working in a large-scale, high-volume commercial production kitchen preparing airline meals to exact specifications. The environment is structured, compliance-driven, and deadline-focused, requiring strong attention to detail, teamwork, and efficiency.

Key Responsibilities Food Preparation & Production
- Prepare, cook, and assemble a wide variety of hot and cold food items in accordance with airline specifications
- Follow standardised recipes, production schedules, and presentation guidelines with precision
- Monitor food quality at all stages of preparation to ensure consistency and compliance
- Portion and label products accurately according to control specifications
- Ensure timely completion of production targets to meet flight schedules
- Adhere strictly to HACCP, food safety, and quality assurance protocols
- Complete required documentation, temperature logs, and compliance records accurately
- Follow all workplace health and safety procedures
- Identify and report any quality or safety concerns promptly
- Work collaboratively within a large production team
- Support supervisors and team leaders in meeting operational deadlines
- Maintain workflow efficiency in a high-pressure, deadline-driven environment
- Contribute to continuous improvement initiatives within the kitchen
- Maintain clean, sanitised, and organised workstations
- Ensure all equipment and utensils are cleaned and stored correctly
- Uphold high standards of personal presentation and hygiene at all times
- Certificate III or IV in Commercial Cookery
- Minimum 7 years’ experience as a fully qualified Chef
- Demonstrated experience in high-volume food production
- Excellent knife skills and strong technical cookery fundamentals
- Sound knowledge of HACCP and food safety standards
- Ability to follow detailed specifications and recipes precisely
- Strong time management skills and ability to work under pressure
- Availability to work across a 7-day rotating roster, including weekends and public holidays
